I received some halibut, and some ling-cod from my sister in Alaska. I was thinking about about smoking it, but the skin has already been removed. Is there a way to still smoke the meat, and if not what are some favorite recipes for cooking the fish?

Hi ya....Bob has a recipe section. Scroll down to the bottom of the page and you will find it. Also buy Golden Dipt batters available at most stores. Cut the halibut chunks thin. Let the halibut defrost and drain well. Put it in a strainer or you have it sitting in its' own juice which we
think spoils the taste. Cook quickly until golden brown.Also try www.Ifish.com for recipes as well. Never tried it smoked.

You might try smoking it on little pieces of food-grade paper, the kind they put under cookies and stuff in an industrial kitchen. A good kitchen-supply place should have it, if not, try your local bakery.
