Any ideas on drying up "wet" eggs. I opened up a couple of jars that were done up this spring and they are too wet. I want to dry them up without ruining them.. Any proven techniques?

You can let them air dry for a day or two on a layer of paper towels in a tupperware container. Rolling them lightly in borax is another option which will dry them out and toughen them up too. I usually air dry wet-cured eggs and use the borax when I don't have time to dry them thoroughly.

i would lay them on moist towels,turn them over a few times till you get the consistency your looking for.i always freeze my cured eggs wet and do the same a few days before using them.scott

Here is what I do with my eggs. After I have put them through the curing soup Bob has in his fishing tips page, I place them on an elevated rack that allows air to get under the eggs. Then i take a fan and put it on low speed and let them air dry. This really speeds up the dry/cure time. I think if you used the fan trick out it help your really wet eggs. My nickels worth.
