LOL - these were the freshest chums I've ever caught on the river. No carpet fuzz and no dracula teeth - hadn't been in the river long at all. Bright, hot chums.

Hey Kevin,

I've eaten friend's smoked chum that were done when still bright. The more oily meat makes for very good smoked fish. But I have never eaten it fresh cooked because of negative remarks about it being mushy that I heard way back. Recenetly I hear some comments that the really bright ones are pretty good BBQ'd. What have you heard or found about this? Anyone else?

No doubt about their superior fighting ability!

There are a few rivers in Alaska where you can get into bright fish of 3-5 species at once (Kenai, Kanektok and Situk come to mind). Years ago on the Kenai a friend bet me that he could BBQ fresh chinook, pink, sockeye, frozen chum and silver salmon and I would not be able to tell the difference. He was right. If you get them bright and fresh, they are all about the same.

I always thought that a chum was only good for smoking once it hit the river..until last year. We caught a real bright one and our guide, Dave Mullins, talked us into baking it in the oven. Darn good..very mild.
