Made this for the fam the other day... couldn't help but take a pic of this goodness! We eat salmon at least 3 nights a week and this was a nice change of pace!

Funny, we've been doing EXACTLY that recipe for a while now. Also goes great on top of ling cod.

Unrelated to the above mango recipe, the other "regular" for us is to drizzle a bit of a raspberry/shallot sauce we make up on top of the salmon about 2 minutes before it comes off the BBQ.

I make and can a very spicy pepper jam every fall...just did it all two weeks ago...and do it both ways with salmon...cold on top of cooked fish, or glazed on top for the last five minutes either on the grill or in the oven.

It's in the oven tonight...fish has been in for seven minutes, jam goes on in three...yummy.
