Anyone have a good recipe for smoked fish sticks (pepperoni style) or salmon sausage (keilbasa style)?

I know that the Briney Sea makes some, but
I am looking to buy a sausage stuffer and want to make my own.

I have always done my own jerky/salmon and have a great sausage book with a couple recipes for fish, but am looking for input on pepperoni/sausage type fish products from fishermen.

Input on brines, cures, smoking duration, and casings would be great.


Anyone have a stuffer for sale? lol
