I ate pretty much that exact meal for lunch yesterday minus the kimchi. Its so good on cold, rainy days.

Kimchi. I love it. There is a Korean place down here that has the best kimchi I have ever eaten. It's phenomenal, and my Mom is always conning me into taking her to lunch there lol

So I had a killer Mexican dinner last night,at a place called Puerto Nuevo in Seaside,CA. They specialize in seafood dishes,so I had a Mexican Paella,my girl went basic with an enchilada,flauta and some other crap. The refried beans at this place are screamin,and normally I'm not a huge fan.

Great food,stinky farts.

Without question, Mexican is my #1 jam and comfort food. Growing up, I was fortunate enough to spend a lot of time in the kitchen with several Hispanic moms and grandma's learning some secrets. The real deal is complex food and not at all like what we think of as Americanized Tex-Mex bullchit. Sauces can take days to prepare. There are very few truly good Mexican restaurants in WA and almost all of those are hole-in-the-wall dives.

I got the recipes yo! I'll share all but one recipe. That one is under lock and key.

HOT FOOD BUYERS TIP:

Costco - Kirkland makes REALLY good pulled pork (not made fresh in store). It's found in the refrigerated prepared / cured meats section. 2 pounds per package or enough for about 10 or so sammies. It freezes well, so I buy several pkgs at a time. Boil in-bag for 15 minutes; mix it up with some good sauce in the container it comes with and serve. It's so easy, clean and convenient. Makes for GREAT camp / hunting / fishing / beach food (use the frozen PKG as ice until it's time to eat). Or perfect single dude food. One pack lasts me most of the week. It's GOOD stuff!

Costco was offering the pulled pork as samples today. It was pretty good. The wife and the kid both thought it was great as well.

Yes sir - I'll hook you up. Mole is pretty simple, it just takes a long time. 72 hours or so. The key is the right blend of chili's for balance and making your own very fatty turkey stock + using real lard. I prefer a darker, earthier mole with chocolate, anise & cinnamon over a spicier red mole made from hotter chilis. Knowing your chilis and how much to use of each type allows you to swing the flavor profile to pretty much whatever you like.

Place here on the wharf has the best rings and tentacles anywhere. Tartar sauce is the business too!

I will also add that market squid is the only way to go,that steak squid is the drizzling sh!ts.

Last night I made the earth shattering discovery that SPAM now makes small individually wrapped single serve packets. Hit up Amazon and less than 18 hours later and I'm the proud new owner of an entire case of backcountry deliciousness. $23.50 for (24) of those tasty little bastards out the fookin' door. SOLD!

Made a coconut lime chili salmon curry to enjoy while watching the fights tonight will post the entire recipe later when I’m in front of a computer it is probably my favorite way to enjoy URB! Coconut jasmine rice and naan bread on the side wink

Yeah, they do make it. My life-long camping and hiking buddy introduced me to it in the Mt Jeff Wilderness a few years ago. Makes a camp breakfast that'll get a boy off to school, or up the mountain if that's where you're headed.
