I took my mom to Petra tonight,a Mediterranean place in PG that's been there forever. PG is an abbreviation for Pacific Grove. I grew up here. As for the food we had tabouli,rice,lamb kebabs,gyros,hummus,and turkish coffee. Oh and dolmas. Nom Nom Nom.
So that place in Eureka. My friend and I go there one evening and order:
Fire roasted oysters on the half shell,with a beurre blanc shallot and chipotle sauce on them,I can't even convey how good they were.
Second was a fig, pig & fog pizza
with basil oregano & parmesan crust ,red wine,cracked black pepper & balsamic poached dried figs, sour cream, aged Humboldt Fog goat cheese , house-cured pancetta bacon, red onion & arugula.provolone & fontina. Dude. And also...
a flank steak with a demiglace with cherries or some [Bleeeeep!] in it,I don't even care what it was it was incredible.
This came with homemade rosemary bread to dip into the olive oil and balsamic vinegar,and a side of au gratin potatoes that was beyond good. Everything is in house. It's about 50 bucks a head for food and drinks minus booze but oh so worth it!

Just a couple hours ago I removed a section of chinook belly strip from the BBQ... cooked at the coolest temp I could get away with and a few alder chips thrown in for a lil smoke. Little butter, olive oil, dab of salt pepper and shredded garlic. That creamy white fat oozing out... like buttah!!!!!

That Tonkatsu talk has me drooling. There's a place in Bellevue that serves up a pretty good bowl. But nothing compares to getting the real deal in Japan. It been 10 years since I was there and I still fantasize about it. Soooo good.

I just made a quadruple batch of Chili Colorado for my own belly and to satisfy Tood's and Sky-Guy's hunger whilst blackmouth fishin'. It was damn tasty. I used many different dried chili's and reconstituted them with onion and garlic and then into the blender. 8 pounds of grade a chuck roast with all of the seasonings. It was dirty dirty and I have several servings in the freezer for a future revisit.
I have so many good recipes, it would make your head spin.

Years ago in Carmel there was a place called Cafe Berlin, and I have never had food like that anywhere in my life. I still talk about it, his rahmschnitzel,jaegerschnitzel,and red cabbage were really special. It was more of a gourmet take on german food and I still talk about it with my pops,how good that place was.
In south France in a town called Comps-Sur-Artuby I had the best pizza I have ever eaten anywhere ever. It had pieces of torn serrano ham,olives,and pesto drizzled with olive oil but there was elements to it I can't describe.
In New Orleans I had fantastic Rabbit Jambalaya and Fried Chicken at Coop's place,Fried Chicken at Willie Maes in Treme. Yeah. Actually a great spot there is the Gumbo Shop in the French Quarter. Try the Gumbo and Red Beans and Rice,or Etoufee ,or Shrimp Creole,and be prepared to go to heaven,but when you have the Crab Cakes you may forget about all that other wonderful stuff!

So anyways...
All that kinky German talk got me all hot and bothered to fix up a big batch of Krautburgers. For those of you that haven't had the fortune of ever having one, they are kinda like an inside out hamburger with ground beef, cabbage and spices. A mid-west German delicacy. They are basically a "Runza" if anyone know what that is. See here. The bread is just boxed hot roll mix. Make up about 30 - 40, freeze and vacuum pack. They warm up well and make for a quick and easy meal when I don't feel like cookin'. Great on the trail or in the boat or camp because you can eat them cold if needed.
You can add cheese or make it "philly" style with peps and onions. Or Italian with ground spicy sausage and a red sauce etc. Super simple and cheap to make, they just take a long time when making multiple batches. I may throw this one up on the recipe board if there is any further interest.
Tood has enjoyed these tasty morsels before and Tood approves. Lord knows we all do out part to make Tood happy. /s.

Deal - check recipe board soon. They really are fantastic. I grew up on these sweet puppies in a VERY German household. The recipe dates back well over 100 years and came over from the old world on the boat.
Bonus I didn't mention before is that they are not messy at all, don't get soggy and pack perfectly (hence trail, boat etc). Everything is inside like an adult hot pocket, but a million times better.

Without question, Mexican is my #1 jam and comfort food. Growing up, I was fortunate enough to spend a lot of time in the kitchen with several Hispanic moms and grandma's learning some secrets. The real deal is complex food and not at all like what we think of as Americanized Tex-Mex bullchit. Sauces can take days to prepare. There are very few truly good Mexican restaurants in WA and almost all of those are hole-in-the-wall dives.

HOT FOOD BUYERS TIP:
Costco - Kirkland makes REALLY good pulled pork (not made fresh in store). It's found in the refrigerated prepared / cured meats section. 2 pounds per package or enough for about 10 or so sammies. It freezes well, so I buy several pkgs at a time. Boil in-bag for 15 minutes; mix it up with some good sauce in the container it comes with and serve. It's so easy, clean and convenient. Makes for GREAT camp / hunting / fishing / beach food (use the frozen PKG as ice until it's time to eat). Or perfect single dude food. One pack lasts me most of the week. It's GOOD stuff!

Yes sir - I'll hook you up. Mole is pretty simple, it just takes a long time. 72 hours or so. The key is the right blend of chili's for balance and making your own very fatty turkey stock + using real lard. I prefer a darker, earthier mole with chocolate, anise & cinnamon over a spicier red mole made from hotter chilis. Knowing your chilis and how much to use of each type allows you to swing the flavor profile to pretty much whatever you like.

The news came out today that 40% of American adults are obese. We wonder why.
What's diabolical is that I'm a thin dude, have perfect blood pressure, cholesterol and whatnot and I can and do eat ALL OF THE BACON almost daily and not gain a pound. At 45. My only bad habit remaining is smoking which prevents some weight gain (3 - 5 pounds maybe), but even when I've quit in the past, I still keep my 32" waistline.
Our work team has a team lunch every Thursday in our building café. I get the same thing, every time. Deluxe, double bacon, double patty cheeseburger, no sauces + avocado & a side of fries. I wash it down with exactly (3) little cartons of chocolate milk and (1) warm chocolate chip cookie.
You should see the looks on my co-workers faces. Every woman around me HATES me and lets me know directly to my face. They say some seriously awful stuff about me and then about themselves. I had one plump girl literally take me aside to ask questions. "Sorry Toots, it's genetics and there is nothing you can do". She got really sad and I kinda felt bad. My vegan East Indian IT workers cry inside every time I take a bite of their god.
But I also bring in Top Pot doughnuts sometimes and people are actually pretty mean to me...."like fvck you dude, I'm trying to diet" as I kill my 3rd Boston Crčme in their face. More hate than thankyous actually. Why are people so mean? What did I do? Tomorrow should probably be Doughnut Friday again.
I probably eat a dozen bacon cheeseburgers a week on average. My standard order at Wendy's is (5) Jr. bacon cheeseburgers and a Medium coke (no fries, they take up valuable bacon space). I eat there 2x times a week probably, sometimes more.
I have gas and I'll probably die soon.

Funny that you mention that nick. I quit smoking about a year ago after 16 years and I have been having trouble keeping the weight off.
My eating habits, I feel have not changed. If anything I'm eating much healthier.
When I did smoke, I could eat anything and everything and I would stay at a consistent weight. About 187-190. I would only eat 1 1/2 meals a day.
I eat about 2 1/2 meals a day, and Now I fluctuate between 199-204. I've been trying hard to shake that last 10lbs with riding a bike and some light weight training, my fvcked back won't allow me to push it. I've come to realize that this might just be my natural weight now.
Quitting smoking was the best decision I have ever made and have no intentions of going back. Believe me I know how hard it is to quit. I failed numerous times.
I encourage anybody who does smoke to quit. Your body will thank you for it.

Yeah, I was always pretty lean, and smoked for a while...but when I quit I went from 195 to 240 in about six months. I worked out like a MFr to lose the chub, and by the time I was done I was 225 and had no chub...and that's about where I've been now for 8 years.
Everything is better when you're not smoking any more, that's an undeniable truth.
I would say the odds are in your favor on this one, from what you posted. Maybe not soon, but probably sooner than you'd care for..unless you're in to that kinda thing.

I like to use sockeye on this or fish I caught in the ocean like coho preferably summer/late summer. In a cast iron skillet with some good oil i sear the fillet at ripping hot heat meat side down for about three minutes. Then flip and sear on skin side for maybe one minute or so that is it. Then set aside to cool , then build my sauce, then when fish is cooked remove skin, and cook my Thai coconut rice or stir fried rice noodles with naan bread. I also usually use sataki mushrooms and baby bok choy in my sauce,and some Thai chili for heat,then add fish back to sauce and poach fish just for a minute or two as not to over cook.Do not skip the lime at the end. Adjust ratios to portions and servings of number of guests. Enjoy!

Bumping this back up.
Let's hear some good quarantine, long shelf life food tips or recipes. I'm trying to balance stretching my fresh stuff out as long as possible without tapping into my LSL food too much. I bought a ton of oranges to prep for this and they're are off limits for all long as they stay pretty fresh. Fresh salad and greens are sparse these days, so I'm having to get a bit creative.
It's not fancy, but canned Hormel Beef Hash or Corned Beed Hash is pretty damned good. Fry some up and put a couple of fried eggs on top. Sure, it looks like cat food coming out of the can, but it's solid and easy. The sodium content is enough to kill any virus though - IMO.
I also made up about 20 big waffles the other day and froze those up for a rainy day. 6 - 8 minutes in the toaster oven to re-heat (when frozen). Piece of cake.
Next weekend, I'm going to make up a load of dog food. We save all of the inedible scrap meat, silver skin, tendons and fat from our venison. I freeze it up in the fall and then when I have time, turn into great chow for the pups. You don't need wild game, some butchers will give you their non-burger grind scraps.
Grind all of your scrap meat or chop way down if you don't have a grinder. COOK IT OUTSIDE - it smells horrendous. Fire up the propane burner. Add a good amount of olive oil to a large stock pot and then add your grind. Brown it down. In the meantime, cook up a boat load of brown or white rice in your kitchen. Also cook up large bags of frozen mixed veggies (corn, green beans, peas & carrots). NO ONION or GARLIC, seasonings, salt or pepper (dogs don't need that stuff). Pour the rice into the pot of browned meat and mix well. Then do the same for the veggies. Once totally mixed - it's done. Let cool completely outside. I then store it in those cheap round Glad Tupperware containers and re-freeze.
This makes a VERY rich pup food, so be careful of upset stomachs. To feed, I reduce their regular dry food by 50% and mix in 50% of my venison mix. They go CRAZY for it. My lab about strokes out.
Besides the expense from hunting, the actual food costs like $10 to make a LOT of dog food. I can stretch a normal 40 lb. bag of dry dog food out twice as long this way (~6 weeks instead of ~3). That saves like $25 - 30 month itself and is handy during social distancing and minimal dog food on the shelves.

I've been wet aging prime rib roasts (bone-on) and NY roasts (boneless) for about 70 days in the spare fridge a few times a year (whenever there's a good sale we grab a few). Once they're ready to butcher, I open up the cryovac packaging and perform some minimal trimming then cut some up into PR roasts. The rest of the meat is cut into steaks, repackaged and froze. This aged beef is the most tender beef I've ever eaten. I've been doing this over 10 years since learning it from a retired Safeway butcher. After serving steaks to my rancher friend, he now buys his rib roasts or NY's at Safeway or Costco and wet-ages it as well...and he runs 400-pair yearly. He still raises a couple of steers for his family consumption; but he just keeps some burger, stew, and tenderloins for his own. The rib steaks, NY's, and the remaining balance go to the kids, sausage, etc.
We don't purchase much beef overall, only rib roasts and NY's all the way. All burger is home-ground wild game with 5 % of beef tallow added for binder (and I save the good prime rib trimmings to add also). Decent amount of venison for stew/crockpot/chili/pan-frying. Lots of fish in the freezer from summer (only 1 Ocean trip - coho, no white fish-that has to change!) Lake Chelan kings are very good though.
Nick, make a batch of venison chili or stew. Eat on it for a day or 2 then freeze the rest. In a couple of weeks bust it out for that first date with one of the future Mrs. Ex-NappyD!!
The garden was neglected, and the gardener fired! lol Easier to go to the farmers market it seemed. Not sure what we'll do this year, seeing as how the boy will be on "corona-sabatical" for 6 weeks, as high school is shut down...might be a good project for him to get it shaped up once the snow melts that showed up last night/today!!!!. (If we can keep the elk out of it, friggin pests have taken up residency recently) I purchased the 1st apple of my entire life this past fall, so growing up in Wenatchee both sides of my family had orchards. It's like buying fish...you just don't do it. Well, there's a new variety and it dam-good!! Cosmic Crisp is the name and I'm addicted! It stores in the fridge fantastic and is still "snappin" when you bite into it plus it has a sweet/tart flavor that I prefer. I've been buying them locally at one of the warehouse retail outlets where I can sort through and find the ones I prefer.
I like the pesto idea too! We did freeze a shait load of raspberries from our small patch, great frozen snacks after dinner. I didn't even think about freezing strawberries, etc.

I made up about 15 gallons of marinara meat sauce and froze a lot of it in meal sized portions. Easy to do. I can eat on very little for a long time.I've been through much worse than this sh!t I'll eat locusts and miner lettuce if I need to.

I made a batch of marinara sauce last night. It was damn good - but it's always better the second or third time across the stove.
Lack of food has been no issue so far. In fact, quite the opposite.

Ya! Homemade red sauce is the chit. I plan on making up a big batch later this summer with tomatoes from the garden.
I just bought my first enameled cast iron Dutch Ovens a couple of weeks ago. A 6 qt and 8 qt. and the plan is to start making lots of bread. Last weekend I made up a big batch of beef stew in the 6qt. that was to die for. So much easier, faster and simpler than using the old crock pot. I'm pissed I waited this long to pick those puppies up. They weren't cheap, but they'll be worth it.
I'm also working on 4 brand new unenameled cast iron skillets (all are Lodge). Lodge gets a bad rap because they don't polish their work. Unpolished cast iron is why you can't make a fried egg in cast iron. Polish em' way down from the start before they've even been used or seasoned and it makes a HUGE difference. We are talking hours and hours of sanding work here (hand and with a mouse sander). Dust everywhere, but it'll be worth it.
I like to use cast-iron. I use it a lot but here's a tip. always have a hot pad or Mitt right next to the handle to remind you to not grab the handle. especially if the pan has been in a hot f****** oven. that is all.
That Finex looks really nice Nick. But I looked at the specs, and I'm thinking that they might be just too damn heavy, not now, but within the foreseeable future for my wife and me. Sure do love seasoned cast iron tho.

I take a cast iron creuset(Nick you will love cooking in yours,mine is a Martha Stewart one and it rocks)
So I browned like 5 italian sausages in the skillet with a little light olive oil,in batches,I have to keep the heat a little lower on my stove,and remove the sausage to a plate. Then I brown some pancetta,not sure how much,enough,don't overcook,just brown,remove that,add another tbsp of olive oil and toss in a diced onion. Get that going a bit,toss in 2 or 3(3) cloves of garlic,and just get that going a bit,then I deglaze all that goodness with a cup of good chianti red wine,less depending how much sauce. Once all those crispy bits are up off the pot I start adding my sauce,I used 2 of those jars of the costco marinara,and added 2 cans of tomato sauce ,contadina,whatever,just sauce,and a little of that Cento italian tomato paste in a tube. I eyeball everything. Just,not too much. I toss in a bay leaf,some basil(dried)and a shake of red pepper flakes,a little italian seasoning,add all the browned pancetta and sausage,and some cracked pepper. I usually shake a teaspoon or so of sugar to knock the acidity down a notch. I get that all boiling and drop the heat and let it blip blip blip for a couple hours,stirring so it doesn't burn or stick. Thats it. I froze a buttload of it. I have a bunch of good pecorino romano to grate over it. Nom Nom.

the algea oil is good actually, been using it on asparagus and tuna and whatnot... pretty much tastes the same as the other sh!t... found a spot where i can get bottles twice the size of the 12 dollar bottles at Walmart for half the price...

apparently he got up in the middle of the night, walked a few steps, and died... the hospital was calling the wife (no clue as to why she wasnt there with him) ALL FVCKING NIGHT, and she never answered until like 2 yesterday afternoon... he was also an organ donor, but since he was dead for 12+ hours, nothing was viable..
Katie was pretty upset about it, the doctor is fvcking PISSED about what went on, and heads are going to roll on this one...

I give to you a new pandemic culinary delight! Also great for campin', fishin' & huntin' camps and whatnot. Copious amounts of weed were smoked in the making of this new midnight delicacy, so you KNOW it's amazing.
NapD90's "Lockdown Hash Melt"
Ingredients:
(1) can Hormel beef hash or corned beef hash (2) Eggs (2) Slices Kraft American cheese singles (or any cheese, as long as its good melty cheese) (2) Slices bread of choice. I used multigrain wheat Some butter. Some pepper. No salt is needed in this bad boy, look at the label of the hash can!) Optional: Hot sauce of choice. Cholula was used here.
Smoke a phat bowl and perform a well executed midnight raid on the pantry. Double tap a can of Hormel Hash, field dress and bring back to camp. Cook Hash in skillet with some ground pepper to taste. Fry eggs in skillet. Toast bread in toaster, then butter. Ladle hash on buttered toast, cover with fried eggs and cheese and splash some hot sauce up on that bitch. Microwave for 30 secs just to melt cheese over eggs. Cover with second piece to buttered toast, smush and slice yer sammy. Enhale.
Redneck as all get out, but this one is the real deal. It's not a perfect sammy, but it is an instant winner and should be a solid all-star for years to come provided the virus doesn't kill us all first. Sammy score: 9.0/10.0
