I would like to buy a symetre reel for jig fishing and some driftfishing for my nephews. This would be for fishing oregon steelhead only. Do I need to get the larger spool 4000 or is the smaller 2000 adequate? What kind of line and # do you load?

The 2000 is what you want.The 4000 is big and heavy.
Spool it up with8-10 lb line. I like Triple fish,or Suffix,or 15 lb tough line is another good choice.
CFM put up a link the other day that had Stradics for about $5 more than you can get a Symetre for.
The other option is a Sahara for about $59 if your stuck on the Shimanos.(good reels) I have a few.
Or the Okuma Avenger 30 for about $35 that people I know swear by.I just bought one myself.Dont get the 20 though,the spool is too small

I use the Symetre 2000 for steelhead. Hold 100 yards of #10 Suffix line. They work beautifully. The Stradic has more ball Bearing and would last a little longer, but unless you're plannng on using it more than 75 days a year I don't think would matter. The 4000 series is too heavy, and the drag isn't designed for a smooth pull at steelhead settings in my opinion.
You might look at the Stradic 2500 which is new and holds a little more line than the 2000's without weighing more.
Both the Symetre and the Stradic use a "floating shaft" design not available on the other models that allow for a smoother retrieve and longer life also.
