My dad dropped about thirty pounds of the frozen smelt off last night and said he wants me to smoke it. How in the world do I do that?????? I imagine it's similar to salmon but with far less brine time. Any recipes and techniques would be greatly appreciated. I think I'll do it this weekend.

Luhr Jensen has a very good recipe for "smokey smelt" on their web page. Check under the smoker booklets and recipes.

I tried smelt with the regular brine and then with the "smokey smelt" brine.

This is gonna get me to go after river smelt more often in the future. This recipe is very tasty.

I smoke smelt every year. I do use my salmon smoking recipe, but brine only two hours. I love em. Anyone who thinks they dont like smelt should try these. Whenever I put them out for friends they disappear FAST!

Smoked it last weekend, turned out great. Nice and greasy - Rock salt and brown sugar for 2 hours. Smoked for 3. Turned out excellent.......

that rock salt and brown sugar brine is the best! I use it with salmon too. A little fresh dill, and ground pepper. I use only alder chips for my salmon. Man, I might have to get some of that going thins weekend. Ps, thanks for the tip, next time I'll light the other end. Its kind of an embarrassing mistake.
