For all you clam diggers out there what is your favorite razor clam recipe?

1. NEVER use breadcrumbs
2. Always make sure they are really dry before you dip in egg and CRACKER CRUMBS
3. Fry hot and quick
4. Be generous with changing the oil.
Some people put them in the refrigerator for a
little while after preparing them. I have had a
problem with that....I think they pick up moisture in the coating and don't fry up as well.

Last week we ate at The Chowder House in
Nye Beach, OR.
They had clam fritters to die for. The best ever and I have been eating razors a long time.

We shall demand pictures of Bob's first Alaska

For all the years that we have gone to Alaska and the length of time that Bob has fished up there, they haven't had it at least where he goes.
We had a really good piece on that toxic dynamite and then when Bob lost everything that was posted on a particular day, that piece went down. I need to find that. Haven't checked the info on WA lately...any information?
Bob has a good section on razors.

minibear i lived and fished in alaska for about 8 years mostly southeast alaska red tide does happen there i would guess it could happen anywhere the conditions were right for the algae to bloom on two different occasions you could actually see that the water all around us was red havent seen it like that down here smile

Actually, there's two things I do. The diggers are always batter and fried. We always made clam fritters. Yummm. But they key to the siphon and body is to grind it. This softens it up. Not grind as into pieces, but like hitting steak with tenderizer. As above, make sure that grease is super hot, and toss in the pan.

Usually though, we will save diggers for the eating. The rest we truly grind into pieces for homemade clam chowder.
