OK I need some help with this. My wonderful wife gave me a vacuum packer for my BD. I have used it for fish etc etc. without problems. My question is how do I go about vacuum packing salmon/ steelhead eggs? Should I cure them 1st and then store or just put them up "raw" to be used / cured at a later date? Also, how long can I keep the eggs in the freezer once they are vacuumed? Thanx for all the help. Mike

I cure the eggs first in ProCure then vacuum pack them. They easily keep for a season.

No the eggs do not get smashed

it is very important to do them in this order: cure your eggs(never freeze uncured eggs), put them into your vacuum seal bags but DON"T seal them..let them freeze first before you seal them, this prevents the pressure from the vacuum popping a lot of the eggs...once they have been cured, frozen in the bags unsealed, that is when you want to seal them up for some real long term storage...although i do incorporate scents into the curing process it's not a bad idea to add another little squirt of your chosen scent right before sealing...having several different scented eggs with differing toughness/milkability(is that a word) could mean the difference between hot fishing and the old skunkaroonie!!

what about when you thaw them out? should you poke a hole in the bag first while still frozen so the eggs don't pop when expanding as they unfreeze?

Vac pac your fish in plastic and vac seal your eggs in wide mouth pint jars after curing.

After I cure my eggs ,I freeze them for about 4-5 hrs and then vacum pack them so they won't squash or mush up. Yes you should poke a hole or cut the bag open before thawing them out.

Keep the skiens in one piece, they seem to hold up better! Freeze first, seal, poke hole thaw, fish...catch?
