Simple is best:

3/4 cup butter
1/4 onion chopped
1 tomato chopped (only use outer part, not slimy innards)
1/4 cup garlic
1 tsp pepper
1 lemon, juiced into container


Take all ingredients and add to a microwavable container & cook for +/- 1 minute or until butter is melted. After this mixture cools the butter will thicken it so it will stay on the fish really well.

Place fish on heated grill skin side down directly on to grill surface, then spread your "Salmon Salsa" over entire fillet.

Cover with foil and cook for 8-10 minutes.
When done, use a spatula to steak meat into portions, then lift it right off the skin onto serving plate. Then flip spatula over to remove skin from grill.


Take pictures of entire process and post tonight after dinner so we can all drool.

What you'll find is that the onion, garlic, and tomato cook right on top of the fillet as it's cooking, and it turns out SUPER GOOD.
Both Mike B and IrishRogue have said it's the best fish they have ever had.

Ry-Guy, I tried your recipe after you posted it during last years sockeye season and it's probably my go-to recipe now. I like all those flavors better then the fishy flavor.

Other guys like Salmo (and apparently Neal) just use light spices (salt, pepper) and maybe some lemon. My buddies father-in-law wants NOTHING on his salmon, just slap it on the grill for a while....he doesn't want anything inhibiting that fishy flavor.

I've got another good topper for fish...

In a bowl mix 15-20 drops of lime juice from squeeze bottle or fresh works.. Add about 1/2 cup brown sugar and a quarter stick of butter. After you cook the fish put the above bowl (covered) in the microwave for 30-40 seconds and take it out and stir thoroughly. After you stir it up heat it one more time for about 25 seconds and stir one more time and pour it onto your piece of fish. It makes some of the best fish I've ever had...

As far as cooking the fish I prefer it in the over on a pan wrapped in tinfoil. I sprinkle Johnny's Seasoning Salt over it, cracked black pepper, some diced onions and a few small butter chunks..

Matter of fact, I'm going to eat some of my springer tonight....

Sorry Parker, I don't do dinner that early. I'd share my salmon BBQ recipe here, but then I'd have to kill everyone who reads it. And that just wouldn't do. I think a salmon BBQ cook off would be a blast, but ya' need a bunch of people with fresh salmon all at the same time. That makes it hard to pull off.

Enjoy that fish guys. I've never had anything better than springer, and that's stacked against Skagit summers, Copper River, and Sitka early kings. Life as a fish snob is rough when you can't get your hands on enough prime fish.

Try a Columbia River Summer Chinook from right around June 20th, there's not a salmonid on earth that tastes better.

All fish sucks....well that's just my .02

Love to catch them, have never kept one for myself. Smoke them our give them to family, slimy nasty creatures to eat,...yuk

Only seafood I like is Ivors white clam chowder all else must be thrown in the garbage.

You told me to book with Keith a year ago (he is the man I believe were your words) since I've just been procrastinating... I finally have a trip booked for the 5th (right in the middle of the run!!! Everyone going is excited from my legendary status I have placed upon the poor guy...still I can't wait... have read nothing but good... So thank you and I’m wondering how much I have to offer/bribe to get some of the ultimate egg cure??????? Keith? suggestions?
