TG should dress about 30lbs. Very nice bird, well mannered. The hen will go about 19-20lbs.

Yeah,
I'll certainly feel a bit sad on butcher day, but the turkeys are livestock that we treat VERY well. Hand fed birds. I figure we have over $50-75 into this big guy, but he wouldn't be in great shape next year because of the breeding that is necessary for the type of bird they are, and he would likely be 50lbs dressed. They eventually outgrow their frame and break down. They can't mate. My other turkeys are heritage breeds, so they will be self sustaining, but smaller.
As far as how I'll do it, remember that Sarah Palin video?
2 weeks and counting.

A friend raised three such turkeys. He named them Thanksgiving, Christmas and Super Bowl. Thanksgiving made it to the dinner table, but after all the work it took to get him there; the other two got pardons.

Cracked corn in a feed bag with a hole in it, then lead him to it, have him go in for feed, wrap him up in the bag with his head out, and then off to the kill cone. He's pretty darned strong, so I wouldn't want to take him on without a bit of assistance.

I thought about just whcking him with a machette, but I need to take him out a bit more gracefully than that. Not quite a pet, but very appreciated around our house for his demeanor.
My first turkey (farm raised and purchased) was taken with a .40 S&W. Makes pretty short work.

Bought the bird from a farmer in Boisfort. Headed up to elk camp. Shot the bird about a mile away, then drove to elk camp. As I was turning in, I changed direction and sped off about 70 yards out of sight, hopped out of the truck and shot into a dirt bank, POP, POP, POP......................POP. Then headed back to camp.
One of my buds asked what that was about, I said nothing. So he goes back to the truck and grabs his grouse, hands them to me and tells me to "Clean my birds, bitch."
I then go to the back of my truck, pull out a non-rigor turkey, still bleeding, and tell him, "this is a bird."
Everyone else in camp turned white, except for me and my buddy, thinking that I had poached a turkey, and then I sat down by the fire and proceeded to pluck the turkey for the next hour or so. Anyway, after a few hours I showed them the receipt from the farmer, showing them that I had purchased the bird.
Part of a practical joke, but the bird did eat really well.
