Does anyone care to share their secret for making salmon jerky? I've tried a few "disasters" myself and would really appreciate some assistance!

I just finished a batch of salmon jerky an hour ago. Disaster, my finished product was not fit for humen consumption. I'm glad I only did a test with a small amount. I marinated the 1/2 inch strips in terriyake for one hour then put it in the dehydrator for 12 hours. I made an oily stinky mess and my wife has banned me from the kitchen. How is it done? I am also looking for answers.

This works for me. I fillet and skin the salmon(chums for jerky)then cut into 1/4-1/2 inch thick strips,cut length wise, not cross section like a steak. Make a brine of 1 cup non-iodized salt 3cups sugar 1/4 cup soy sause to 1 gal water. This is just a starting point for salt- sugar,you can adjust for your taste. Lots of sugar is the key. Soak the fish in the brine 8-10 hours, referigerated. Drain and rinse with fresh water. At this point I put the strips in a plastic colinder and let it drain for about an hour, but you can place them on your smoker racks and pat them dry with a paper towel.Spray your racks with pam first. I use a big chief becuase it easily takes a whole chum. Spinkle on some red pepper flakes if you like hot. Black pepper is good too. After it sets on the racks for an hour or two, put it in the smoker and burn 3 pans of alder chips. Then let it dry with no smoke untill its as hard as you like it. This could be from 8 hrs on,depending on humidity and preference on hardness. Don't use any metal kitchen ware becuase the fish will pick up a metalic taste.

If this helps I use a food dehydrater. I cut my fish into 1/4" strips soak in three cups soy or teryake 1/2 lb. brown sugar and 1/2 a
bottle licquid smoke. Brine in a zip lock bag for 15 mins. Then dry in a towel for a few minutes then dehydrate for approx twelve to teny four hrs. MMGooD!!!
