Just a quick question concerning smoked fish. I was wondering how long your smoked fish lasts after you vacuum seal it. In the refrigerator and the freezer. To be honest, I've smoked a lot of fish but have always eaten it within a couple of days of smoking it. Anybody experimented with any time frames and lived to tell about it?

I've experimented a bunch. I've never gotten sick and have eaten fish many months after vacuum sealing with and without refrigeration. Think about the stuff they stock in stores or you mail order thats not refrigerated.

Vacuum sealing smoked fish works great, just make sure that the bones do not puncture the plastic. I've kept smoked fish for over a year and it tasted the same as when I had froze it.

If you can't wait and haven't got a microwave, there's always the armpit method. But seriously, vacuum packed fish will last three months in the frig and a year in the freezer.
