Is it Ok to store eggs that you are waiting to cure in the freezer(raw right from the fish, in a ziplock bag)???

Also what is your way to cure eggs.

I did this this summer with the salmon eggs and it did not turn out for me. Once it was defrosted the color changed and it looked awful. I had it wrapped in freezer paper and then in a zip loc. If you can your better off curing it fresh. Just my opinon.

The problem with freezing uncured roe is that the freezing process creates small fractures in the eggs outer membrane. Then when you try to cure them they never stop juicing. Then you end up with a formless bunch of egg mush. When you cure the egg it toughens it up enough to endure freezing. NEVER FREEZE ROE BEFORE CURING!

I cure my eggs before freezing usually, but my brother-in-law gave me some silver eggs he had froze (uncured). I tried to cure them and ended up with an egg mush just like Monty commented.

Ive never froze eggs. I just bury them deep in the super fine borax. Mine have done well for several months like that.

Ive had good luck in the past freezing trout roe in water. 1/2 gallon cartons work well or 2 zip locks just in case of a leak. Will find out how it works on salmon roe soon--froze some this fall i didnt have time to get cured--------wonder how the egg mush will work for crab bait if they go goey ?

Eggs are always best if cured first, but if you get some eggs that have been frozen first, they can be salvaged if you slowly unthaw them (in the refridgerator) and cure them with a brine cure like the one on the tips section. They won't be as good as fesh cured, but they will not be mush either... don't unthaw at room temperature and don't use a cure such as pro-cure on them.
