I have tried many ways to vaccum pack and freeze my cured eggs, but when opened up they go mushy or wet. I called Procure and tried their suggestions, but got the same results. I've tried Borax, Procure and Shure Strike. WHAT! am I doing wrong? Am I vaccum packing too tight? confused

Freeze your eggs before you vacum pack them.I put then in the freezer for about 3 hrs then vacum pack them.Works great.

When I vac pac cured eggs I put them in two layers of paper towels which helps to cushion it a bit. Oh yeah, do like dawhunt says and freeze them first. I semi-freeze mine in paper towels for about a hour or two and they turn out great when I seal 'em up.

Bob, do just what "The Kid" says. when you unthaw them open the bag so any moisture will escape.

Remember to "pop the bag" or break the vacuum seal as you take 'em out of the freezer. Let them thaw without the vacuum pressure and less of them will squish. Good luck!

Go purchase some canning jars in the size you would like (pint works well for me) and seal up in there. Problem solved. They are pretty cheap if you purchase by the case and you can get new lids at safeway for a couple of bucks per dozen. I prefer the jars over using the bags. Cost isn't that much more as over time it is really only new lids you will need.

i also,freeze my eggs in quarter skeins till frozen before vaccuum packing,put them in the bags pretty wet,then cut the seal before they thaw.then i lay them on towels for a couple days or till they feel right.never had a mush problem yet.never liked jars.scott

I save the old styrofoam tub from under one pound hamburger packages. Put your eggs in the tub in borax and vacuum seal over that. Gives you a nice container just right for a day of fishing and the tub keeps the vacuum sealer from squishing your eggs.

g-man i have had pretty good luck if i pack um and then freeze before i put them in borax or pro cure or whatever you like.also the jars work well if you put a piece of waxpaper in and light it then put the lid on.also i wasn't trying to bash you on the smoked fish smile it is just a matter of personal taste.

I didn't consider jars. I have an adapter so I can vaccum seal jars, but they do take up abit of room. I know, I could get another smaller freezer just for my eggs. JigginJim, I knew that.

Like a lot of the others have said freeze then vacupac.I usually just freeze them one day then the next day vacumn them. I use the Jar attachment, just remember that if they have been in the freezer to boil the lids to soften up the rubber so you get a good seal. This is how I do mine and it works great.

I simply get as much moisture off the Pro-cured eggs and then put them in Glad freezer bags and that's it. I've never had any problems with them looking or feeling any different then the day i cured them, even after 9 months in the freezer. Moisture was the only thing to worry about cuz it caused freezer burn. I like the jar idea though.

i buy 1 cup tupperware containers from the dollar store. put your eggs in the container, then vacuum seal the whole thing. they dont take up much room, plus the eggs wont get crushed

Spend the money and get some pint and Qt jars. It will completly solve yourproblem. Then buy soem of the plastic lids for when you are fishing. I would never freeze or vac pac any eggs in a platic bag...........
