I've been lurking for a hour trying to find a post I thought I read in here about deep fried turkey sometime around Christmas. Used the search option to no avail. Can anybody help?
Thanks, Maguana

Ifish had a few threads on it, so you might want to go there and search. I also went to "ask.com" and typed in "deep fried turkey", got tons of info. Anything specific you need answered?

I got a cheap fryer at K-mart for $69.00 with a 30 qt pot. Went to the feed store for my baster (50 cc syringe), only $1.50, compared as high as $9.00 in the store. Most recipes are pretty straightforward. Tried a beef roast and injected beef boulion, turned out great. Done two turkeys so far, (I mean fried two turkeys.)

It's the only way we cook turkey now, I heat the oil to 375 degrees, inject with marinade, cook about 3 minutes per lb. Peanut oil is the only way to go,it doesn't spatter as much and won't burn like the other oils will, I also filter the oil when done and reuse it 5-6 times. My favorite marinade is red tabasco sauce, YEE HAW!

Dogfish, Great tip on the baster and recipe source. I got a 32 qt. with a really nice stainless steal stand from my dad as a gift. It came with everything but the baster and directions for caring for the oil.

HBP, how do you filter the oil and how do you store it? How do you know when it's no longer safe to use. Is vegetable oil reuseable 5 or 6 times.

I cooked our first turkey last night. Seasoned it with some cajun spice. It was really good even though I cooked it a little too long.

I bought the turkey fryer as a kit and it had the strainer in the kit, it looks kind of like a collander but it has a finer screen and a handle, I can't remember how long the oil will last because we usually fry up a couple turkeys in deer and elk camp then come home and take it duck hunting, and do a couple ducks or a goose, so the oil is used in a couple weeks. My brother frys them for the guys in his Fire Dept. and he saves the oil for a month or so with no ill effects. As far as using anything but peanut oil, you can but the manufacture of my fryer says the oil will burn ( start to turn dark brown and taste bad )and that it also spatters more, which is a BAD!! thing, if you have any moisture on the turkey at all the oil will spatter everywhere and burn the crap out of you! anyways I think cabelas sells the strainer, Good Eats!!!

Oops, almost forgot, we buy the oil in 3 or 4 gal containers and when were done we strain it back in the jugs and keep it on the shelf in the garage.

Thanks for all the input. An interesting tip I found in a recipe at allrecipes.com is to drop a hole onion in with your turkey and half way thruogh the cooking process it will float to the top and keep the oil from scorching. I don't know if or how it works.

Fry guys,
Filtering your oil will definitely add to the life of your oil. The better you filter it the longer it will last. Your oil will last for months as long it is heated up to to 250 every 3 0r 4 weeks or so. The oil really doesn't go bad on its own, its the impurities from the turkey and your marinades that break down your oil and can go rancid over time. Heating will keep any "bad" stuff dead. Peanut oil is the best to use because of flavor. Soy bean oil is much better for you and less expensive. I mix the two to get the flavor and extend the life of the oil. You will definitely be able to smell and taste when it is time to change your oil, but I think it will last longer than most people would think. My $.02.

I bought an electric cooking oil pump that runs on 2- "D" cell batteries. It filters the oil while pumping it out of your pot back into the containers. Works pretty well but a little spendy, $25 bucks and comes with two washable filters. Bought it at Dennis Co. in Aberdeen and is probable sold anywhere the cookers and supplies are sold.
