You are asking a dificult one!I have an extensive collection of books and recipies and the only reference I can find is on the web[not including the ltlcheif handbook] and refers to little necks not razors.

Oysters are another story.There is quite abit of info out there on smoking oysters.I have smoked oysters a few times and will say that it is tricky to get a good tasting product.

I would suggest that you follow the guidelines for oysters and experiment!I would love to hear about the outcome as it might help me later with oysters.

Just what I do We can them in 1 teaspoon of salt and 1 cap full of liuqid smoke taste excellent and not chewy or mushy

Smoked razors are do-able. Try a 3-1 brown sugar to rock salt base wet brine (not a dry brine!). I brine for a few hours and smoke for 3-4 hours. They are somewhat chewy (like jerky) but my ole fishing buddy Spawnout loves 'em w/a good glass of Guiness!

Again, smoked razors are incredible if you can match the brine and smoke time.

Towards the bottom of the page are detailed instuctions and ingredients for smoking razor clams. I have one bag left in the freezer from my trip to AK last summer. It's going to be hard not to fry 'em up, but if you let us know how they turn out after you smoke 'em then I might go that route too smile
