i was readin thru the sts mag and one of the authors mentioned adding sodium sumthing to the eggs, what is this stuff and where do i get it, and is msg the same thing?? i thik i will skip on the copenhagen thing, the smell of it would probably make me ralf.. *blah* hate that crap..skoal mint too...well anyways, can someone point me in the right direction to the do's and donts of this stuff, and the places where to get em..thanks..

Sodium sulfite--- Can be purchased at a photographic supply place. You can start looking in the yellow pages.

A good dry mix is 1 part sulfite, 1 part salt, 1 part sugar. If you do a search, in this forum, you will find other recipes.

MSG can be purchased at safeway. It will be in the spice section. It will be called flavorite(or something). Look at the ingredients. It should just say Monosodium Glutamate (MSG)

sodium sulfite(NA3SO3)basically is a anti oxidant ... it inhibits oxidation,, removes oxygen....been using it for years in my egg cures... pro cure sells it for rip off prices,, and they dont tell you how to use it either,,you can find on the net or at photo stores..
