OK. My brother and I are planning to smoke up a bunch of birds in the next couple of days..... Here's the problem..... How long do we want to smoke em for, and how long and on what tempurature will we have to finish the birds off in the oven? Has anyone tried this before? Any help you can offer will be greatly appreciated.

The way my friend use to smoke his turkey was to put it in the smoker for 4 hours and then put it in the oven. Not sure of all the steps but I do remember his saying something about smoking it for no more then 4 hours. confused

Depending on the size of the bird, 3-4 hours is plenty of smoke. I always do mine with indirect smoke (cool, not cold) and they turn out great. I usually finish them covered in an oven at 350-375* for what ever time it takes to get the core up above ~170-180 for atleast 20 minutes. These guidelines have worked well for how we do ours. It will take quite a while in the oven, fyi.

They taste fantastic, but day 2 is even better once the smoke has really set in and all the oils permeate the entire bird.

Be sure that bad boy is defrosting in the fridge already!! Usually takes about 3 days to thaw. Remember, you don't thaw fowl on the countertop.

After or during the smoke be sure to get the heat up in order the kill the bacteria and germs. If you don't you will probably get very sick. <img border="0" alt="[fragile]" title="" src="graemlins/fragile.gif" />
