Like many of you late middle age fishers and hunters that have noticed lately that the ol' bod is complaining bitterly about being overweight and still being asked to pack gear and fish up and down rivers, sacks of decoys out into the swamp, or bucks out of the woods, I decided I had better lose some of that extra lard and started the Atkins diet in February. Actually lost enough weight already to make up for a full sack of full body goose dekes ![laugh laugh](/forum/images/graemlins/default_dark/laugh.gif) Of course if you do Atkins you have to cut out the sugar, and since my brine for smoked fish used to use a lot of brown sugar, not to mention apple juice which is mostly sugar, I have been experimenting with sugar free fish brines and actually hit on one that works great: One part sugar free Torani carmel coffee syrup Two parts soy sauce One part water Garlic and other spices to taste You need to brine the fish for two days, and stir them up once to ensure that the brine penetrates properly. Had confirmed sugar-a-holics taste this and swear it is just as sweet as my old recipe, yet there are 0 carbohydrates in the whole batch. Yes, the Torani syrup has Splenda brand sweetener in it, which is also know as maltodextrin and is basically made from sugar but is chemically modified to no longer be a carbohydrate. This is the one Dr. Atkins recommends and is not one of those that is supposed to cause cancer.

My buddy did the same thing with his smoked salmon. Dry brine of rock salt and splenda. Doesn't sound as yummy as yours though. Me, I'll stick with the sugary kind and continue to watch my gut get bigger and bigger. Sure is yummy though. Cuttie ![laugh laugh](/forum/images/graemlins/default_dark/laugh.gif)

Has anyone on an atkins diet tried the old brine to see if it actually takes you out of Ketosis? I was thinkinf of smoking up some pinks my old way and tryign it just to find out if I gained weight ![smile smile](/forum/images/graemlins/default_dark/smile.gif) Been on and off Atkins ... Lost 83 lbs the first time, gained it back in 2 years.. on it again and 30 lbs down so far...

StorminN, the biggest box of Splenda I've found is a whole 3.6 ounces and costs about $3.26. Hate to do a dry brine with that! I don't do Costco but would be tempted if they had Splenda in bulk.
