We took our, almost four year old, grandchild clamming today at Penn Cove. It was a great day. We got big butter clams, oysters, and steamers. He had a ball getting squirted by clams, digging his first clam and playing with all the sea creatures.

Penn Cove has tons of public tidelands and the preassure was light. I have never seen so many big cockles and mussels

Any great recipies for clam chowder?

BB I can go very big, as we will freeze the remainder. We have about 2 lbs. of clam meat.

take all your clams and put them in a big pot.

add 1 bunch celery (trimmed)
2 large onions
as much garlic as you like (fresh)
1 stick of butter
water up to the level of the clams and vegies
boil until all the clams open. save all the water(nectar) and vegies and discard all shells. seperate all the meat and put aside.

fry up about a half a pack of bacon, not to crispy but well done, set aside. reserve about 2 or 3 Tblsp. of drippings.

In the nectar, put,

the bacon drippings
2 small or one large bag of frozen hashbrown potatoes (the ones that are little cubes)
4 tsp chicken boullion granules(or more)
1/4 cup worcestershire sauce(or more)
1 tsp dried tyme(or more)
1 tsp pepper

bring to a boil; reduce to a simmer and cover.
simmer about 10 min. or until potatoes are soft.

then you'll add
1 quart heavy cream

now the fun part. I use this stuff called Wondra. It's a gravy thickener I use instead of flour. I sprinkle gradually into the pot as i'm whisking constanly. Bring back to a boil as your doing this and add as much as you want to make as thick as you want. After it comes to a boil it should be thick enough. Bring it back to simmer, add as much of the clams as you want and the bacon, crumbled of course and return to boiling again, whisking more Wondra in if its not thick enough for you. Whisk continuously. I like mine thick. boil about 2 min stirring all the while and reduce heat. Take the garlic bread out of the oven, the creamed sherry out of the cupboard and have a good time. Also don't forget to taste as your cooking and add salt and or pepper as needed. Don't add to much Wondra at once either or you could get a grainy texture. Always taste as your going

Right now we are in a rush to get out if town for a conference in Spokane. Can I freeze the clams in the shell for a few weeks, or will that ruin them?

I probably would'nt with all the stuff other than clam in the shell. I would be kinda creeped out what would happen when they thawed out. It would probably be best to boil them without the veggies and butter,shell, vaccum seal, then freeze the meat. When you come back, use the recipe I gave you but put the veggies and butter in with the potatoes and other stuff on the initial boil. You'll need to add some bottles of clam juice with the water though. Make it about a 1/3 clam juice to water ratio. Also I did'nt mention to chop up the veggies. ;\)

Is that the young feller that got nailed by the rogue wave when he was razor clamming?

Recipe sounds great. I like potatos and corn in mine, but that's just me. Bacon is crucial ;\)

Yes that's the same guy who got slammed by the rouge wave when razor clamming. He was VERY nervous about approching the water at Penn Cove. It took a good bit of coaxing to get him near it.

His dad is a nice guy, but not an outdoorsman by any stretch, so I feel I need to teach him to fish, hunt, swear, drink whiskey and other manly arts. No luck so far on the whiskey and chewing tobacco but he's not yet four.

SQ: True story. Yesterday we were at the Holiday Market, with about six folks in line behind us. I had a minor flatulance attack, but was able to at least keep it quite. My grandson promptly announces in his loudest voice "Papa farted! Papa Farted". I tried slinking out of the store, but not before I heard the young guy behind us say, "Right on kid, you tell it like it is" I didn't know whether to laugh or cry. The wife and I have laughed about this all day today.
