Your filet method worked great on my Kings tonight. I had a couple of hogs that we cut the head and tails off to fit in a fish box....I thawed them enough to filet/used your method and they are brining now to smoke tomorrow.
I'll use your method again soon to do the other two for the grill.
Thanks again,
Dave

Glad to hear the method worked well in your hands.

I'll be looking for that box of vac-packed collars and bellies when the FedEx Man shows up.

Doc
I spent all day smokin the fish yesterday. If I make it out to Westport I'll let you know and hook you up-though you seem to be well stocked! I usually fish the Sound or Neah so don't hold your breath...

I used that same method on the King I caught on the 12th of June. Worked awesome!

I have never been one good at filleting fish...but this method is excellent, and leaves a clean carcass and very few bones.

Thanks Doc!

Mike

Fishin' Doc. - I wholeheartedly concur.

I landed a bright 20lb springer last week on the Sandy so I decided to try filleting the fish per your instructions. It was remarkably easy and I got alot of meat off the bones that I normally miss. It's a bit slower than the usual method but I'm not interested in speed-filleting. Perhaps next time I need to fillet 100 sockeye  I'll switch back; but for now on I'll use your method. Thanks again.

Even after filleting fish for 30 years, I can still learn something new........

Doc, when did you post the method? I must have missed it. Thanks!
