I found the same thing in a king I caught in BC last month and never did get any answer to what it was. Were they about the size of peas or a little larger?

From Chum King, "The common name for this is "tapioca disease" and is actually caused by a parasite. This parasite causes (and resides in) the cysts is classed as a metazoan (similar to a protozoan). And for anyone who cares or who wants to try and impress friends, the scientific name of the critter is Henneguya salmonicola.

This is a relatively common parasite in salmon, and I am unaware of any information that indicates it can be vertically transmitted to humans. I would cut the cysts out, and just make sure the meat is cooked thoroughly."

Thanks for the info FNP.

One of the Ebay kings I caught this summer had a couple cysts in the meat. I have heard of others with lots of cysts.

I HAVE RUN INTO THOSE PARASITES FOR YEARS. A FISH AND GAME GUY TOLD ME THEY WERE HARMLESS AND TO GO AHEAD AND EAT THE FISH BUT WHEN THEY MATURE AND YOU DIG THEM OUT, THEY ARE A LARVA, LIKE A MAGGOT. YOU GO AHEAD AND EAT THEM, I,M NOT. GOOD REASON TO TAKE A GOOD LOOK AT YOUR FISH BEFORE YOU YARD THEM OUT OF THE WATER. DH

It's been some time since I caught a salmon with a cist infestation, but I do recall being able to easily see the bumps under the skin. At the time, I didn't know what they were, but I cooked it up, and then fed it to the dogs as soon as I ran into one of those white nodules. They may be harmless, but I couldn't take it. \:\(

The subcutaneous cysts that F5A speaks about are a very different type of infestation from tapioca disease. Lots of coho with the subQ cysts which are hard and nodular. Tapioca disease is very SOFT.... like a Dairy Queen cone on a 80 degree day.... and you cannot determine its presence or absence by the external appearance of the fish.
