I did not glass the bottom, but instead added that 1/4" ply skid plate. I was not pleased with how the Coat-It went on, and found it difficult to apply. That could have been attributed to the bare plywood bottom vs. one with glass, as you have, but I found the epoxy + 30% graphite powder to be a dream to flow on, and I'm very pleased with the end results..so far.
As for the paint, here is a link to a discussion by old-timer, professional boat builders. Note especially the comments by Dave Carnell. My take is the guy really knows his poop about paints.

So far, in three coats, I've used just shy of a quart of it, and have a quart to spare for us in the trim parts of the interior. I bought the same paint in a different color for the bulk of the interior (floor, inner sides, etc.).
