Just for fun, I took today's big fish....
and fillet it in one piece. Now if I only had a smoker with racks that could handle it...

How many shots with the pistol did it take to get all of those.

I get fillets that size in my Big Chief.

Dave, the fillets do fit in a Big Chief, if you cut the one piece (both halves) into the conventional one-side fillets. I would just like to smoke the whole thing in one piece, one time and be able to bring it to a party as one huge butterflied fillet. I made noises about getting that old fridge set up as a smoker last year and didn't get to it.......it'll probably be the same story again this year, but who knows......maybe I'll.......nah

I have a smoker they will fit in. Let me have them. I would rather split the fillets in at least half long ways to allow the heat around the thicker part of the meat, but boy, they would fit just fine.

Never tried a butterfly fillet, how hard is it not to punch holes through all the organs? Always thought the belly meat wasn't very appealing to most.

I will take all of the belly neat you have, I think is the best part. I also cut the fins off , leaving a nice chunk of flesh and smoke them as well.

The belly meat has all the fat=Omega 3. Good stuff.
