I have cured eggs from different species of salmon and I'm wondering which species produces the best qualality eggs for bait? Coho and King work pretty well but what about Sockeye or Chum? What about steelhead eggs?

I like chum eggs. But, one of the best guides I know swears that he likes the eggs of whichever species he is targeting.

IMO the eggs from the species you are targeting are best (what Dave said). But it also kind of depends on the species you are targeting. If it's Steelhead then my second runner up are Coho eggs, third are probably Chum, but every other year I seem to have an over abundance of Humpy eggs, which have caught many fish also. I also believe that you'll have greater opportunity if the eggs you are using come from the river system you are fishing.
My 2/100's of a dollar...

So I saved the skeins from 3 large steelhead last night and they are in my cooler in a ziplock bag. Is it to late to try and cure them ??? I was going to go buy some pro-cure and try it.

I like sockeye eggs and they look soooooooo good with natural cures. The down-side is that they juice real bad. However, if they're cured correctly they are the most beautiful looking thing that could dangle off your hook. Every time I change-out my bait, I spend 30 seconds admiring their beauty before they hit the drink. Coho eggs are my second because they're not too big, not too small. Steelhead eggs aren't too shabby either, especially in low conditions because they make a nice little cluster on a small hook. I use king eggs for kings, period. When I run out of those, I use sockeye. The only problem is that one sockeye skein only gives you about 3 bait-ups for kings.

B-RUN, it's not to late, although curing within the first 12 hours is best. Also, pro-cure would not be my first choice among the commercial cures. #1: Steelhead eggs from large ripe females (The tribes hatchery fish on the Quinalt River's Cook Creek or the Queets River's Salmon River are *AWESOME*). #2: King eggs. #3: Silver eggs. #4: Chum eggs (to oily). #5: Sockeye eggs (to small). #6: Humpy eggs (why bother).

I have had several multiple fish days using humpy eggs, they work very well.

Foreign eggs to local rivers works best... Actually my favorite is the chinook eggs, especially springer eggs from the latter part of July and early August. They are the toughest eggs and fish the best. If I could have 5000 pounds of them, I'd be happy. Second would be silver eggs. But I too have noticed that fish like their own species of egg. Silvers for silvers and so on. But steelhead love chinook eggs best... Keith
