ok heres the deal...
I just finished curing a batch of my eggs, i use the salt/sugar/borax cure with a sprinkling of procure dye. I then freeze my eggs,and herein lies the problem. I noticed that the eggs, instead of staying their translucent red color, turned solid orange. This only occurs in small clusters on the eggs. The clusters formed on the areas where they were incontact with frozen peas. Maybe they froze too quickly? I know there was nothing wrong with the curing/ harvesting process because the fish were throughly bled. Any ideas to what is causing this?

I assume they are still frozen? If so don't wory I have had the same thing in half of my freezer. I think what you are seeing is ereas on the skeins that have a higher moister content (didn't brine properly) hat have allowed ice crystals to form in the individual egg. Try making sure you either butterfly the skeins more or you can pre cut the clusters you fish with before they go into the brine. When you thaw the eggs you should see them return to thier translucent look.

Make sure to cool the eggs slowely by putting them in the fridge for a few hours then put them in the freezer. Cool the eggs to quickly and cells can burst and turn eggs a very bright/cloudy color. Cooling to quickly can also make fish fillets mushy.

Try putting them in a tupperware container for freezing if your not already doing that. Layer borax, eggs, borax, eggs, and make sure the eggs are towards the middle of the container and not touching the sides. This eliminates any air and slows the freezing process so they do not get shocked.
