Got the first two eggs today!

Kind of small, but it is a start. One was broken, as the hen layed from the roost, but the other is perfect. I'll check for more tomorrow for more eggs, and hopefully get a few more for a good breakfast shot.

At about $750 per egg, the first two were a bit spendy, but the rest are free.

hell yea! nothing pisses me off more than finally dialing in a killer king salmon cure. my eggs out fish thier's to the point of being owned! only to have others ask why do you do it that way?

Here is the first egg (left) and the two laid today! I also added another store bought "jumbo" to show what size they are relative to that. The first one is pretty small. Almost a banty sized egg, and very dark.

Banded the two who laid these, a barred rock and a rhode island red. Two down, fourteen to go.

Eggs are getting cheaper every day!

When you start wondering how you're going to eat all those eggs, check out some frittata recipes. Pretty versatile base that can incorporate a lot of different things into it.

12 hard boiled eggs, chopped
6-7 fist sized red potatoes semi-firm boiled then cubed
5-6 Farmann's German style dill pickles chopped
1 white onion, chopped
4-5 stalks celery from the heart, chopped
1 tsp yellow mustard or 1 heaping tbsp whole grain
2 tbsp grated horseradish (optional)
1/2 tsp black pepper
1 tsp salt
Stir in Miracle Whip to texture.

Love the farm fresh eggs. The admin lady at my office brings me some every now and then. What a difference.

Irie - nice recipe but Miracle Whip is terrible.

Miracle Whip, people either like it or they don't. I like it, I guess because I was introduced to it as a kid before I ever had real mayanaise. So Irie's potato salad recipe looks pretty good to me. I checked out those instructions for homemade mayo, and it would have to be pretty killer stuff for me to consider going through that bother. Then again, I don't think I've ever had homemade mayo.
