I got about 5,000,000lbs of Sockeye eggs and i cured them up using the jar method like usual, but they all came out pretty soft mad . But i also tried Pro-Cure's new Wizard cure on them. Is it the eggs or is it the new cure? Has anyone tried this new cure? What have been your results? Should i go back to the original or did i do something wrong here? I have never had this problem.

I would say it is the eggs. Sockeye eggs are a little different than other salmon. They will probably have a different feel to them too.

I was thinking that before i got them home but they were nice and firm with tight skeins, just like every other batch i have done. I'm thinking more and more that it is the new cure.
