After a few requests for the recipe of this dessert, usually as it is being repeatedly shoveled into a few member's maws, thought I'd share with y'all. It's how my gran rolled. I have many fond memories of patiently waiting at her table for this one to cool enough to be savored with a healthy dollop of whipped cream. More recently, it has been known to even sweeten up KK...

Grandma Elsie's Fruit Cocktail Cake

1 C. Flour
1 Egg, wisked
1 C. Sugar (see Notes)
1 tsp. Vanilla
1 Can Fruit Cocktail (15 oz. see Notes)
1 tsp. Baking soda
¼ tsp. Salt
½ C. Chopped walnuts
¼ C. Brown sugar

Directions: Preheat oven to 325F deg. Grease and flour an 8 inch sq. pan. In a large mixing bowl, sift dry ingredients together and then combine the wet ingredients and mix well. Spread evenly in the prepared pan. Bake for 45 minutes. Remove from oven, cool in pan on a rack.

Topping: Sprinkle some additional chopped walnuts and brown sugar on top before baking.

Notes: Serve warm with whipped cream.

Consider using fruit cocktail that uses pear juice for sweetener rather than sugar or high fructose corn syrup to make the fruit more pronounced. Western Family Chunky Cut Naturally Sweet or similar. Sugar can be reduced to taste as well.

Use a 9” x 12” baking pan if doubled, and bake for an additional 5- 10 minutes. This cake is gooey on the inside and can’t really be tested with the normal toothpick method. Bake until the center is solid when the pan is gently nudged and edges are slightly crusty. Reduce cooking time slightly if a Corning or Pyrex pan is used.

If someone will tell me how to replicate Farmann's German Style Dills, I will post my Granny's potato salad recipe.

Farmann's Pickles has changed hands like 80 times and their German Style pickles are getting harder to find around here.
