This won't win any Chili cook-off prizes, but it is super simple to put together and tastes great.
I generally brown the burger & onion the night before. Throw everything together in the crockpot in the morning, turn it on low and it is ready to eat when you get back from fishing.

One lb Ground Beef ( You can also use ground Buffalo or Turkey)
One Large Sweet or White Onion (Diced)
Two 27 OZ Cans of Kidney Beans (Drain the beans)
One 12 OZ Can of Tomato Juice
One 28 Oz Can of Diced Tomatoes
One Package of McCormicks Chili Seasoning (Mild or Hot)

Brown the ground beef and onion. Add it and the rest of the ingredients to the crock pot. Stir well, then add just enough water to cover the all ingredients.
Set the crockpot on low for 5 hours...done.

You can easily crank it up by adding Tabasco, crushed red peppers or whatever elso you like to use to turn up the heat.
I generally make it mild since some folks in the chow line may not like their chili spicy.
