OK, Here is a GREAT recipe that's really easy to prepare. Makes 4 servings of 1/4 lb. each
Ingredients:
4 boneless/skinless salmon fillets (1/4 lb. each, If you like larger portions just double the other ingridents.)
1/2 cup honey
1 Tbsp liquid smoke
2 Tsp salt (more or less to taste)
1/4 cup butter
1 1/2 cups plain bread crumbs
* Turn your broiler on high (move your oven rack as close to the broiler as possible, if you have an electric oven you may want to disconnect the batteries on your smoke alarm)
* In a small bowl combine honey, liquid smoke and salt.
* In a baking dish large enough to accommadate your fillets add the butter and place in oven until the butter is melted. Remove from oven.
* Coat both sides of fillets with honey smoke mixture.
* Place the bread crumbs in a gallon size plastic bag and coat one fillet at a time.
* place the fillets in the baking dish and rotate them all once before placing under the broiler so that each side is coated with butter.
* Broil about 4 or 5 minuites on each side and remove from the oven.
