The wife and I recently bought 1/2 a beef and of course were blessed with a LOT of brisket. We smoked some and it was good, but then we wondered why we couldn't make our own corned beef. We found a good looking recipe on the Internet, bought the necessary spices and brined up a batch.

It is so much better than any we have bought in a store I doubt we will ever go store bought again. It is a fairly complex recipe and it took three days of brining but the final product is super.

Looks delicious.

Makes me think of Gramma O'Connor's Irish boiled dinner.
Potatoes, carrots, cabbage and of course corned beef.

That corned beef would go well with some homemade kraut in a sandwich or a bun.
Mmmmm.

Yep. For example, did you know there is cinnamon in many CB brine recipes? It's a nice undertone, but I will cut back on it just a bit next time.

I love corned beef. I only dig St. Patrick's day because of the coned beef and cabbage, and I eat it that whole week.

Plus, reuben sammiches? Mmmmmmmmmmmm.

For my taste I would cut the cinnamon in half, and not brine more than three days.

You can probably use the sams recipie. Try brining up some of your snow geese. Corned goose is awesome. A friend gave me his recipie, and I tried it. Its hands down my favorite way to eat geese. Or slicing it thin, and blackining, and quick fryin. Thats good too.

My girl makes a reuben dip in a crock pot with corned beef,sauerkraut,thousand island dressing and cheese,let it all get mushy and [Bleeeeep!] and dip rye toasts into it. Umm yeah!
