Man, that looks great! That sauce would taste good on just about anything.

Tried this recipe last night with a fillet of Spring Chinook caught that morning. F.uking epic! we baked the salmon instead of grilling due to me taking my BBQ to the dump earlier this year. still great though

Tried the pan-seared version with fresh springer tonight.

The only thing I did different was to cook the fish and the sauce separately.

Seared a lightly salted springer belly fillet on both sides with a touch of olive oil on high heat to get a brown crust. Removed the fish from the pan to let rest and finish cooking. Sauteed the garlic and ginger in the pan leavings til golden. Added the rest of the ingredients except the fresh basil. Cooked and reduced the glaze as described.... added basil as I turned off the heat.... stirred... spooned it over fresh-seared springer belly.

Golden crust on the outside, custard smooth on the inside.... sweet, spicy, fragrant sauce.... HEAVEN!

Gonna make that for my girls this weekend!

That sounds really good Doc! Although, I'm not sure you can go wrong with fresh springer belly! I'm going to have to try that recipe.

On the guy's website, he recommends switching up the fresh herbs between basil, mint, and cilantro to give unique variations on a similar recipe.

Tried it with the fresh mint leaves for dinner just now. Fragrant beyond barely begins to describe it. And once it hit the taste buds... oh my.... HEAVEN!

Highly recommended.
